Winemaking: Manual harvested organic grapes are pressed and go through a wild yeast fermentation, 10% in large foudres (large wooden vat). Unfined, unfiltered with low levels of sulphur used.
A complex, fragrant and balanced dry white wine with a wonderful lightness and delicacy, soft texture and smooth creamy structure.
Family owned business. Will Davenport has been making wines for 20 years. The winery is at Limney Farm, an old dairy farm with buildings that made easy conversion for their new winemaking purpose. Since 1993 they have extended the buildings for a dedicated bottling area and temperature-controlled store. Since 2010 the winery is now solar powered. Solar panels generate enough electricity to run the whole winery. The site is south facing and sheltered with mainly clay soils.
