Vinification: Manual harvest, pressed as entire bunches. Long ageing for 19months in tank and French oak barrels. Bottled with very light filtering.
Old vines means a vibrant deep bouquet of fruits, honey and nuts. Full-bodied long lasting wine. Rich white for big occasions. Can be aged or decant for half an hour.
Domaine Thibert is situated in the village of Fuissé and is run by Christophe Thibert, assisted by wife Catherine and sister Sandrine who studied winemaking in New Zealand. There are 20 hectares in total, 95% planted to Chardonnay all farmed along organic lines, and their holdings include 8ha in Pouilly-Fuisse, 1ha in Pouilly-Vinzelles and 4ha in Macon-Fuisse.
