Vinification: Hand picked grapes get sorted and naturally fermented in old, open-top french oak barrels. Foot treading and manual punch down. Ageing took place in French oak barrels and 9000 litres old oak barrels for 27 months. Minimal intervention. Very ageable!
Complex aromas of redcurrant, plum, red cherry, cedar and spice. Plenty of fine tannins. Decant for two hours.
Living soils and a natural approach is the core of Waterkloof wines. These factors combine to produce low yields, balanced grapes and wines with a true sense of place. Waterkloof follow a traditional, minimalistic approach in their gravitational cellar which means interfering as little as possible with the winemaking process.
