Vinification: Hand harvested grapes are fermented on skins for 7 days. Then pressed into half new oak and half second fill oak barrels. Aged in barrels for 18 months before bottling.
Dry, full bodied red, dark fruits with plenty of wood spice and leather. Drinking great now but can be aged for another 5-10 years.
Babylonstoren vineyard, located near Simonsberg in South Africa, spans 72 hectares and is renowned for its diverse range of 13 grape varieties. The vineyard benefits from unique terroir, with some of its Pinot Noir and Chardonnay plantings reaching altitudes of up to 600 meters above sea level. Established in the 17th century, the estate is a blend of history and innovation, with modern vineyard management practices introduced in 2008 and 2009 by viticulturist Hannes Aucamp. The farm's commitment to quality is evident in every aspect of its operation, from the meticulous care given to the vines to the state-of-the-art cellar overseen by cellarmaster Charl Coetzee. Babylonstoren's wines, crafted in collaboration with winemaker Klaas Stoffberg, have been released annually since 2011, garnering recognition for their exceptional quality and craftsmanship.
