Wine making: Hand harvested grapes are destemmed then go through a 15 day maceration on the skins. Wild yeast fermentation, aged for 8 months in concrete vats and 1 month in bottle before release. Unfined and unfiltered.
Ruby red in the glass, the nose has intense aromas of red fruit, Mediterranean herbs and spices. The palate is fresh and soft with good acidity, sweet tannins and a good length.
Arianna’s home town of Vittoria lies in the far south of Sicily just to the west of Ragusa. It is here that she has been making wine for the past ten years under the tutelage of her uncle, Giusto Occhipinti who owns and runs the famous COS estate. 280 metres above sea level. The soil is medium density red sands and chalk from sub-Apennine limestone
rocks.
